Thankful Cookies

Zoie made delicious Pumpkin Chocolate Chip cookies for her friends at school. She had a pretty fun time pouring the ingredients into the mixer. 

Her favorite part was the little bowl of dough I gave her after everything was mixed.

Here is the recipe for our Pumpkin Chocolate Chip Cookies.

Directions

  1. Preheat oven to 400 degrees
  2. Plug KitchenAid Mixer into outlet
  3. Attach bowl then whisk
  4. In the bowl combine: pumpkin puree, sugar, coconut oil, milk and egg
  5. Turn mixer on to speed 2 for about 3 minutes
  6. Turn the mixer off, scrape the sides with the rubber spatula
  7. In the medium size mixing bowl combine: flour, baking powder, ground cinnamon, baking soda & salt
  8. Use the spoon to mix the dry ingredients
  9. Turn the mixer on speed 3-4 and slowly add the dry ingredients (watch you do not hit the whisk or the flour mixer will go everywhere)
  10. Have the mixture go about 4-5 minutes
  11. Slowly add the chocolate chips
  12. Let go for about another 2 minutes
  13. Turn the mixer off
  14. Detach bowl & whisk
  15. Spray the cookie sheets with the cooking spray, also spray spoon
  16. Take the spoon and take a small scoop of the cookie and place on the cookie tray about 1.5 inches apart
  17. After the cookie sheet is full place in the oven for 10 minutes or lightly golden brown
  18. Using the oven mitt remove the cookies from the oven
  19. Remove the cookies from the cookie sheet with the turner and place on cooling rack
  20. Allow cookies to cool to desired temperature and enjoy!
