Strawberry Banana Oatmeal Muffins

Last night Zoie & I made Strawberry Banana Oatmeal Muffins for her teachers!

This was a fun and quick recipe to throw together!  They are sugar free, lactose free & nut free, great for a  school snack.


  • 3 Organic Bananas
  • 2 Cups Organic Strawberries
  • 1 Cup Almond Milk
  • 2 Large Brown Eggs
  • 1 Tbsp Baking Powder
  • 1 Tsp of Pure Vanilla
  • 3 Cups Rolled Oats
  • 1 Tbsp Cinnamon
  • Olive Oil Cooking Spray



  1. Pre-heat the oven to 350°
  2. Using the cutting board & knife finely chop the strawberries, discarding stems
    • I cut my stems off of my strawberries and puree them in the blender
  3. Place strawberries & bananas in the mixing bowl
    • Use the wire whisk,
  4. Turn mixer on low, make sure the banana is mashed
  5. Add Almond milk, Eggs & Vanilla
  6. Mix until smooth
  7. One cup at a time add rolled oats, baking powder &  cinnamon
  8. Blend until evenly mixed
  9. Remove mixing bowl from the stand, scrape sides with the rubber spatula
  10.  Set mixing bowl to the side
  11. Spray your silicon muffin cups with a light coating of cooking spray, place in the muffin tin
  12. Using a 1/4 measuring cup, fill the silicon muffin cups 3/4 way full, place in muffin tin or on cookie sheet
  13. Place in oven, cook for 35 minutes or until the cake tester is clean after inserting into muffin
  14. Place muffins on a cooling rack, cool until desired temperature
