Banana Cupcakes w/ Chocolate Coconut Icing

For Zoie’s 1.5 (18 months) I made Banana Cupcakes w/ Chocolate Coconut Icing for her to take to school to share with her friends. 

The icing seriously my favorite part, I had a lot leftover, so I used it was so fluffy and nice like a type of dip.  I feel like it would have tasted great with Annie’s Bunny Graham!

Banana Cupcakes

Ingredients/Tools

Directions

  1. Preheat oven to 350, make sure the oven is empty
  2. Place cupcake liners in the muffin tin, one per hole
  3. Attach paddle to the Kitchen Aid Mixer
  4. Combine: Bananas, Lemon Juice, Honey, Eggs, Butter, Vanilla & Coconut Milk
  5. Turn Kitchen Aid Mixer on 4, blend until smooth, then turn off
  6. In the large mixing bowl combine: Oatmeal Flour, Baking Soda & Cane Sugar
  7. Mix with a whisk, make sure contents is mixed well
  8. Turn the Kitchen Aid Mixer on stir
  9. Slowly add the contents of the large mixing bowl into the liquid contents
  10. Once all the dry ingredients have been added, turn the Kitchen Aid Mixer up to 4
  11. After a about 3-4 minutes turn the Kitchen Aid Mixer off
  12. Using the rubber spatula scrape the sides, then turn the mixer back up to 4
  13. Turn the Kitchen Aid Mixer off
  14. Now remove the bowl from the mixer, using the spoon fill the cupcake liners
  15. Fill the liners to the top
  16. After all the liners are full, place the muffin tin in the oven for 25-30 minutes, or until the cake tester is clean
  17. Once the are fully cooked, use the oven mitt to remove from the oven
  18. Remove the cupcakes from the muffin tin, CAREFUL they are hot
  19. Place hot cupcakes on the cooling tray
  20. Cool for about an hour or place in the freezer for about 15 minutes
  21. Then can then be dipped into the icing, remember the rounded side, not the paper side
  22. Allow for the icing to harden, then enjoy

Chocolate Coconut Icing

Directions

  1. Attach Whisk to the Kitchen Aid Mixer
  2. Using the can opener, remove the top of the can of the coconut milk, be careful
  3. Dump the coconut milk contents into the mixing bowl, remember the fat is on top and the milk is at the bottom, it might leak, watch
  4. Us the rubber spatula to scrape the sides of the can
  5. Turn the Kitchen Aid Mixer on 3
  6. Add cocoa, honey, vanilla & powdered sugar one at a time and slowly
  7. Turn the mixer up to 5
  8. Let this mix for about 5-8 minutes
  9. Turn off, scrape the sides of the mixing bowl with the rubber spatula
  10. Turn the mixer back on to 4, slowly
  11. Add the package of unflavored gelatin
  12. Let mix for 5 minutes, then turn off
  13. Remove the mixing bowl and place on a flat surface near the cupcakes
  14. Place the cupcakes (one at a time) in the icing **Remember, not the paper side, the rounded side**
  15. Once the cupcake has been dipped place on the portable cupcake/cake tray
  16. After the tray has been filled or all the cupcakes have been dipped place the tray lid on and place in the fridge
